Chia Pudding (with a Green Twist!)

These 5 easy chia puddings are a part of my Green Reset series, which also includes 5 green juice recipes and 5 green smoothie recipes. I created the series to show you how you can easily sneak more greens into your healthy breakfasts (even if you don’t usually like greens!) For these chia puddings, you’ll find the “green” in the form of ingredients like pistachios, mint, and matcha (though you could use green spirulina instead as well!)
HOW TO USE THESE RECIPES: you can either pick and choose your favorites and make them any time you’d like, or you can incorporate them into a challenge or mini reset. If you’re following a 5-day reset structure, simply swap out your breakfast or one of your snacks for a chia pudding (in combination with other wholesome meals of your choosing for the other mealtimes. The Benefits of Chia Seed Pudding

- Chia seeds have a lot of health benefits. They’re high in antioxidants and super nutritious! (Since chia seeds should be soaked for optimal digestion, enjoying them in chia puddings like the ones in this article is the ideal way to consume them.)
- Chia pudding is easy to make and can be meal prepped. This makes them an excellent healthy breakfast option for anyone with a busy schedule.
- Chia pudding, especially when prepared with soy or pea milk, is high in both plant protein and fiber. This makes chia pudding a great meal or snack that’ll both nourish you and keep you full for a long time.
A Few Quick Tips & Notes
- Be sure to prep the chia puddings the night before or at least a few hours before eating them as they need time to thicken. Chia seeds should only be consumed soaked or blended. If you forget to prep the puddings ahead of time, you can blend the soy milk, maple syrup & chia seeds instead, then mix them with the other ingredients.
- To make it more practical, you can prep the chia pudding base for each recipe up to 2-3 days in advance. I wouldnโt recommend prepping all 5 recipes at once, however! Feel free to adjust the amount of maple syrup to your liking if the puddings are too sweet or not sweet enough. Each recipe makes 1 regular or 2 small servings. If youโre planning on eating a chia pudding as a meal, Iโd recommend going for a large serving and as a snack, a small serving.
- To add more protein, feel free to include 1/2 – 1 scoop of plant-based protein to each recipe (you might need to add a little extra plant milk too).

Recommended Equipment
You won’t need much equipment to make these chia pudding recipes, just a few basics you most likely already have at home.
- A whisk: to avoid clumps of chia seeds to form and to ensure your chia puddings are as smooth as possible, I recommend whisking the chia seeds and plant milk using a whisk.
- Mason jars: (or any other reusable containers with a lid) to store and serve your chia puddings in.
Shopping List & Ingredient Notes

This shopping list includes the ingredients needed to make all 5 chia puddings included in this recipe eBook. Feel free to use different ingredients as you see fit!
Fresh Fruits & Herbs
- 1 banana
- 1 kiwifruit
- Fresh raspberries (1/2 cup + 2 tbsp)
- Fresh mint leaves, optional
Nuts & Seeds
- Chia seeds (1+1/4 cups = 8.8oz/250g)
- Peanut butter (3 tablespoons)
- Pistachios (5 tablespoons)
Other Ingredients
- Unsweetened soy milk (3+3/4 cups/900mL)
- Maple Syrup (5 tablespoons)
- Vanilla extract, optional (3/4 teaspoon)
- Matcha powder, optional (1/2 teaspoon)
- Peppermint Extract, optional (to taste)
- Cacao Nibs or dark chocolate chips, optional (1 tablespoon + 1 teaspoon)
Shopping List Notes
- Feel free to add plant-based protein powder to your shopping list if you want to add even more protein to these chia puddings)
- To make this shopping list more budget friendly, you can omit the mint leaves, vanilla extract, matcha powder & peppermint extract.
- I recommend soy milk because itโs high in protein, but you can also use almond milk, oat milk, or any other type of plant milk you like!

Chia Pudding Recipe 1: Pistachio & Kiwifruit Chia Pudding
(yield: 2 cups = 1 large or 2 small servings)
Ingredients
- 4 tablespoons chia seeds
- 3/4 cup soy milk
- 1 tablespoon maple syrup
- 1/4 teaspoon vanilla extract
- 2 tablespoons pistachios, roughly chopped
- 1 kiwifruit, peeled and cubed
Directions
- The night before (or at least 2 hours ahead of time), mix the chia seeds and soy milk in a bowl or jar using a whisk,
- Cover and let set in the fridge.
- Mix in the maple syrup and vanilla extract.
- Top with the pistachios and kiwifruit and enjoy!


Chia Pudding Recipe 2: Matcha Berry Chia Pudding
(yield: 2 cups = 1 large or 2 small servings)
Ingredients
- 4 tablespoons chia seeds
- 3/4 cup soy milk
- 1 tablespoon maple syrup
- 1/4 teaspoon matcha powder
- 1/4 teaspoon vanilla extract
- 1/4 cup fresh raspberries
- 2 tablespoons pistachios
Directions
- The night before (or at least 2 hours ahead of time), mix the chia seeds and soy milk in a bowl or jar using a whisk.
- Cover and let set in the fridge.
- Mix in the maple syrup, matcha powder, and vanilla extract.
- Top with the raspberries and pistachios, and enjoy!


Chia Pudding Recipe 3: Peanut Butter, Berry & Matcha Chia Pudding
(yield: 2 cups = 1 large or 2 small servings)
Ingredients
- 4 tablespoons chia seeds
- 3/4 cup soy milk
- 1 tablespoon maple syrup
- 1/4 teaspoon matcha powder
- 1/4 teaspoon vanilla extract
- 1-2 tablespoons peanut butter
- 1/4 cup fresh raspberries
Directions
- The night before (or at least 2 hours ahead of time), mix the chia seeds and soy milk in a bowl or jar using a whisk.
- Cover and let set in the fridge.
- Mix in the maple syrup, matcha powder, and vanilla extract.
- Top with (or layer with) the raspberries and peanut butter, and enjoy!
Recipe Note: You can either add the raspberries whole or heat them in a saucepan over medium heat for a few minutes to create a raspberry purรฉe.


Chia Pudding Recipe 4: Mint Choc Chip Chia Pudding
(yield: 2 cups = 1 large or 2 small servings)
Ingredients
- 4 tablespoons chia seeds
- 3/4 cup soy milk
- 1 tablespoon maple syrup
- Peppermint extract to taste (optional)
- 1 tablespoon cacao nibs
- 1/2 banana, sliced
- Fresh mint leaves (optional)
Directions
- The night before (or at least 2 hours ahead of time), mix the chia seeds and soy milk in a bowl or jar using a whisk.
- Cover and let set in the fridge.
- Mix in the maple syrup, and peppermint extract.
- Top with the cacao nibs, banana, and fresh mint leaves.
- Enjoy!
Recipe Note: Peppermint extract is very intense, so be sure to use a very small amount only (about 1-2 drops), then adjust to your liking.


Chia Pudding Recipe 5: Peanut Butter, Banana & Pistachio Chia Pudding
(yield: 2 cups = 1 large or 2 small servings)
Ingredients
- 4 tablespoons chia seeds
- 3/4 cup soy milk
- 1 tablespoon maple syrup
- 1/2 banana, sliced
- 1 tablespoon peanut butter
- 1 teaspoon cacao nibs
- 1 tablespoon pistachios, chopped
- 2 tablespoons fresh raspberries
Directions
- The night before (or at least 2 hours ahead of time), mix the chia seeds and soy milk in a bowl or jar using a whisk.
- Cover and let set in the fridge.
- Mix in the maple syrup.
- Top with the banana, peanut butter, cacao nibs, pistachios, and raspberries.
- Enjoy!
Recipe Note: You can either add the peanut butter alongside the other topping or add it to the bottom of a jar first, then add the chia pudding and toppings.
